How to Grill Burgers
Ground beef has a different safety rule to steak, and it's the reason burgers get overcooked. Here's the temperature, the timing, and why you should never press the patty.

Burgers look like the simplest thing on the grill and carry the one rule people most often get wrong. A steak can be safely cooked rare because bacteria live on the surface, and the surface gets seared. Grinding beef mixes that surface all the way through the patty, so the inside has to reach a safe temperature too.
That’s why the USDA safe minimum for ground meat is 160°F, higher than the 145°F for whole cuts of beef. It isn’t a doneness preference; it’s a different food-safety situation. Anyone telling you to cook burgers to medium-rare the way you would a steak is skipping over that distinction.
Building a better patty
Start with the fat. An 80/20 blend is the standard for a reason — leaner mince produces a drier burger, because there is simply less fat to render. 90/10 makes a burger that’s safe and disappointing.
Handle the meat as little as possible. Overworking mince compacts it, and a compacted patty cooks dense and springy instead of tender. Form it loosely, season the outside generously with salt just before it goes on, and stop there. Salt mixed into the mince early starts curing it and changes the texture toward sausage.
Then press a shallow dimple into the center of each raw patty with your thumb. Burgers swell in the middle as the proteins contract; the dimple gives them room to do that and come out flat instead of domed.
Never press the burger
The most satisfying sound at any barbecue is someone pressing a burger with a spatula and hearing it sizzle. That sizzle is the fat and juice you were about to eat, landing in the fire. It does nothing except dry the burger and cause flare-ups.
The one exception is smash burgers, which are a genuinely different technique: a loose ball of mince pressed hard onto a hot flat surface for the first few seconds only, to create an edge-to-edge crust. That works on a griddle or a cast-iron plate with a burger press, not on an open grate, and the press comes off after those first seconds.
